When we arrived in Sweden after the horrors of war, we quickly realized there was a demand for kataifi – but not for the kind we knew. What was available in the shops was a far cry from the dough we were used to working with. It was tired, heavy, anonymous. Imported, stored, lost.
We wanted to do something different. Something vibrant. We wanted to show what kataifi can taste like – when it's made with love, knowledge, and respect for the raw materials.
